SEXI FIRMVM MENU

FOIE

Foie micuit medallion cooked in Firmvm covered with green pistachio on red fruit coulis, violet flower jam, caramelized seasonal fruit, quince paste, spiced bread and fig bread cubes

WHITE ASPARAGUS, MANCHEGO CHEESE, SCALLOPS AND IBERIAN HAM

Cream of white asparagus and Manchego cheese with cooked asparagus tips and sauteed in noisette butter, grilled scallops, crunchy Iberian ham and wild rocket

VIETNAMITE ROLL

Stuffed with duck in hoisin sauce and lilies stir-fry with “quisquillas” from Motril (small shrimps) infused in garlic Extra Virgin Olive Oil over crunchy “quisquillas” and sweet-and-sour mango sauce

BLACK TAGLIATELLE

Squid ink tagliatelle with eel and smoked salmon with chardonnay sauce, mascarpone, basil, aged parmesan cheese and citrus touch

SOLE

Sole Paupiettes stuffed with grilled Jumbo shrimp on sauteed red cabbage, tomato concasse and sautéed pine nuts, covered in beurre blanc sauce

Citrus palate cleanser: lemon with passion fruit

VENISON

Venison steak fillet marinated in red wine, seared on the grill with aromatic herbs served with meloso style wheat berries, black trumpet mushrooms and lilies cooked with Pedro Ximénez

ALMUÑECAR IN A DESSERT

Traditional “Cazuela Mohína” (an almond-based cake) served on a bed of  white chocolate syrup and fresh mint, caramelized mango and homemade ice cream of custard apples from Cantalobos
